The Last Few Weeks

I'm not going to lie, they have been difficult.  I was so proud of myself for being so diligent about posting.

Then, on Tuesday July 17th the unthinkable happened - my precious little Bella died.  Many of you know what happened and to be honest I really don't want to go through it again.  Let's just say that she was accidentally run over and due to the extent of her injuries she died. I know that to most she was just one of my three dogs but to me she was SO much more than that.  She had been my little shadow for almost 5 years and I honestly miss her every day.  I have to say that despite the sadness I am so happy that she isn't suffering or in pain any more and I am a firm believer that we will meet each other again.  But for now, she's my angel pup in heaven.

Thankfully for us, we've had a lot going on so it helped me take my mind off of my little pup.  We were able to spend some time with our good friends Jeremy and Aubrie when they made a "pit stop" in Birmingham.  We got to see Lauren and Steven and they were kind enough to babysit for us when we went to dinner with your good friends Rafa and Ximena.  We ate at this amazing restaurant called Ocean and it was fabulous and SO delicious!

I was avidly pinning on Pinterest and found a tutorial on how to make a "tutu wreath" and boy was it easy!
You only need:
100 yards of tulle (I did 50 in one color and 50 in another and got them for 1/2 off at hobby lobby!)
A 8-10 inch wreath (I chose the straw wreath with the plastic cover - also 1/2 off at hobby lobby!)
1 large spool of 2 inch ribbon (I used this to cover the wreath before attaching the tulle so that you wouldn't see it)
Your choice of decorations!

I also made one for my sister in law!

This past weekend Daniel's parents visited for the first time since Eloise's baptism. We had a good time, Daniel played two shows so it was fun for them to watch him preform.  They also really enjoyed spending some time with Eloise.  I am happy to say that she had a blast and was able to pretty much stick to her nap/bedtime schedule which was nice! Here are some photos of her at the park for the first time!

Babies, Birthday's and the 4th...

Well it's been a fun week!

Saturday - I was up in Nashville for my bff, Emily's, baby shower!  It was SO cute - Katie and I chose a book theme and I think it turned out great!  The craziest thing that happened is that Emily ended up getting check into the hospital on Sunday and little Jude was born on Monday! He was about 4 and a half weeks early but was really healthy and is already home!  Emily is doing well too - it was a crazy week for her but I know she's SO excited to have Jude here! Here are a few sneak peek photos from the baby shower!

That brings me to the topic of birthday's!  SO - not only was little Jude born on Monday but I celebrated my 28th birthday.  I have to say that I really enjoyed myself.  Eloise and I went to Birmingham to have lunch with Lauren and then did a little shopping!  It was a blast.  Later that night we had a family dinner out at Kobe. Thank you everyone for the birthday wishes and for the wonderful cards and gifts!  Thank you notes are coming :)  Here's the gift I bought with my birthday $$!!!  It finally came today and I am SO excited to start using it!

Daniel took Tuesday and Wednesday off so we have a blast just hanging out as a family!  Tuesday we went to Birmingham and then I hosted book club at the house!  Wednesday was a great day except for all the rain!  We ended up hanging out with Patrick and Anna for most of the day and had a cook out with them that night!  We even shot off our own fireworks!  The only downside to that is that Eloise hated the noise!  Hopefully she'll grow out of that one day!  She was SO adorable in her red, white and blue...

Hope you have an awesome weekend!! :)

Happy Friday!

This week has gone by SO fast!  It's been crazy!  Thankfully, I have enjoyed every second of it!

Ellie and I took the week off from going to the pool...it's just TOO hot outside and it was nice to play around the house. Needless to say, it's been nice!

SML Photography is up and running and in FULL swing!  I wasn't quite sure how quickly I would start getting shoots but to my surprise it got going quick!!  I've had two shoots all ready and have five more lined up!!  Oh and I just found some really cute accessories!!

We've had a great week --- lots of cleaning, playing and running errands!  Last night we went to the country club for a Back Forty beer tasting and BBQ party!  It was awesome! :) everything was so YUMMY!  If you haven't had Back Forty beer you've GOT to try it!  I personally like the Naked Pig!

This weekend we've got a lot going on... I am going to Nashville for an overnight so I can go to Emily's baby shower tomorrow!  Sunday Eloise will officially be 8 months old! I cannot believe it!!  Hope you all have a great weekend too!!!

Finally Updating...

So, Lord knows I have been TRYING to get this update done but boy have I just not done it.  I am so glad that barely anyone reads this right now as I could really use a swift kick in the butt for not updating.  I AM going to make it a HUGE effort to update every Friday from here on out! Here's my update:

1. I opened my own photography company!!! It can be found at www.facebook.com/SMLPhoto :) if you feel so compelled "like" me!!

2. I've finally gotten the house under control!! Yippee!!! It feels SOOOO good to have a clean house and we've decided to hire a maid service to come every three months to help us get that deep clean done since I just don't have time for that!

3. Eloise is growing like a weed!  I am so ENJOYING being her mommy!  She learns something new every day and it's so amazing to watch!  As excited as I am to see her growing up there's a little part of me that hates to see it too because I want her to be my little baby forever!! But since I know that she's got to grow up I am just going to enjoy it!

4. We feel so blessed to have met so many amazing people here in the big AL!  I tell Daniel all the time that we go out more here then we did when we were in college! haha - and Eloise is welcome everywhere!!  We also found an amazing babysitter who takes amazing care of her!  I will be so sad when we have to leave again.

5. Here's a sneak peek at Eloise's 1st Birthday Theme!!

I am cooking again!!!

So I love my new house and with that comes more cooking!!  Here's what I've been cooking up!

William-Sonoma's Sautéed Chicken Breasts with Whole Grain Mustard Sauce

Serves 4
4 skinless, boneless chicken breast halves
2 teaspoons unsalted butter
2 teaspoons olive oil
salt & pepper
For the sauce

1 shallot, minced
1/2 cup dry white wine
3/4 cup heavy cream
3 tablespoons whole-grain mustard
salt & pepper

Place a large baking dish in the oven and preheat to 150F. We''ll be using it to keep the chicken warm while we make the sauce.
Rinse the chicken and pat dry with paper towels. Use a meat pounder to lightly pound the breasts to an even thickness of around a 1/2 inch or you can purchase the thin sliced breasts from the store. Season both sides with salt and pepper.

Heat a large pan over medium-high heat and melt the butter with the oil. When the foam begins to subside, add the chicken breasts and cook, being careful not to crowd the pan (do them in batches if you need to), until just beginning to brown, roughly 2 minutes. (If the chicken is thicker than 1/2 an inch it will obviously take longer to brown.) Turn the chicken over and cook, around 2-2 1/2 minutes, until firm. With a sharp knife, cut a small slit in the middle of the thickest piece and make sure there is no sign of pinkness. Transfer the chicken breasts to the baking dish in the oven.
Now on to the sauce!
Return the pan to medium-low heat and add the shallot. Cook, stirring, until slightly softened, about a minute. Add the wine and raise the heat to medium-high. Simmer, stirring with a wooden spoon to scrape up the tasty bits from both the bottom and sides of the pan. Keep stirring until the wine has reduced to about 2 tablespoons. This should take around 3 minutes. Stir in the cream, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Bring to a boil, and then simmer, stirring constantly, until the sauce is thick enough to coat the back of a spoon, 1-2 minutes.Turn off the heat (if using an electric stove, remove from the element) and whisk in the mustard until smooth. Take the chicken breasts out of the oven and place one on each plate. Top with a couple spoonfuls of the sauce and serve at once.

Pasta A La Betsy (via the Pioneer Woman)

Ingredients

3/4 pounds Penne Pasta
1 pound Shrimp
3 Tablespoons Butter
3 Tablespoons Olive Oil
1 whole Onion (small)
2 cloves Garlic
1/2 cup White Wine, Or To Taste
1 can Tomato Sauce (8 Oz)
1 cup Heavy Cream
Fresh Parsley, to taste
Fresh Basil - To Taste
Salt To Taste
Pepper To Taste

Preparation Instructions

Cook the penne pasta until tender-firm, also known as al dente.
Peel, devein and rinse (under cool water) 1 pound of extra large shrimp. Heat about 1 tbsp. butter and olive oil in a skillet. Add the shrimp and cook for a couple minutes until just opaque. Do not overcook them. Remove from heat and let cool for a few minutes. Now, put the cooked shrimp on the cutting board and pull off the tails. Chop the shrimp into bite –sized pieces and set aside.
Finely dice one small onion. Mince two cloves of garlic.
In a large skillet heat 2 tablespoons of butter and 2 tablespoons olive oil. Add the garlic and onion and sauté, stirring occasionally. After the garlic and onions have cooked a bit add your white wine. Let the wine evaporate for a few minutes, stirring occasionally. If you would rather not use wine, you can use low-sodium chicken broth instead (about ½ cup).
Now add an 8-ounce can of plain tomato sauce. Stir well until combined. Then add 1 cup of heavy cream. Continue stirring. Turn heat down to low and let simmer.
Now chop your herbs, about a tablespoon of chopped parsley and about the same amount of chopped basil, or if you’re feeling very proper, chiffonaded.
Now add your chopped shrimp back into the tomato cream sauce. Give it a stir and add salt and pepper to taste. Throw in your herbs and stir until combined. Finally add your cooked penne pasta and give it a good stir.

This is the most delishous soup I've ever made and we have it ALL the time.

_____
FOR THE GARNISHES:
Sour Cream
Diced Avocado
Diced Red Onion
Salsa Or Pico De Gallo
Grated Monterey Jack Cheese
Cilantro

Preparation Instructions

Preheat oven to 375 degrees. Mix cumin, chili pepper, garlic powder, and salt. Drizzle 1 tablespoon olive oil on chicken breasts, then sprinkle a small amount of spice mix on both sides. Set aside the rest of the spice mix.
Place chicken breasts on a baking sheet. Bake for 20 to 25 minutes, or until chicken is done. Use two forks to shred chicken. Set aside.
Heat 1 tablespoon olive oil in a pot over medium high heat. Add onions, red pepper, green pepper, and minced garlic. Stir and begin cooking, then add the rest of the spice mix. Stir to combine, then add shredded chicken and stir.
Pour in Rotel, chicken stock, tomato paste, water, and black beans. Bring to a boil, then reduce heat to a simmer. Simmer for 45 minutes, uncovered.
Mix cornmeal with a small amount of water. Pour into the soup, then simmer for an additional 30 minutes. Check seasonings, adding more if needed—add more chili powder if it needs more spice, and be sure not to undersalt. Turn off heat and allow to sit for 15 to 20 minutes before serving. Five minutes before serving, gently stir in tortilla strips.
Ladle into bowls, then top with sour cream, diced red onion, diced avocado, pico de gallo, and grated cheese, if you have it! (The garnishes really make the soup delicious.)

New House = Less Stress!!!

It's March and I can hardly believe it!! What a month it has been.  We did make it in to the new house!!!!  It's been SO amazing all ready!! :) We worked really hard to get everything together and getting the house relatively in order before we celebrated our little Eloise's baptism with many of our family and friends this past weekend!!  I have really tried hard to find a cleaning schedule that works well with my life now as a stay at home mom... on that doesn't mean I have to spend ALL day EVERY day to keep it nice and manageable.  And low and behold Pinterest was my saving grace.  I found a great pin with a cleaning schedule for Monday - Friday.  Its awesome!  If you follow me on pinterest it's on my organization board!!  Here are a few photos of the new house!

Here's Miss Eloise's room....

Organized? Who me?

So, many who know me know that I am a *fairly* organized person. When I say that I mean that I know where everything is but no one else does.  I am also a *neat* person but not the type-a neat freak that I grew up with (sorry to call you out mom, I do love that I can eat off of any floor in your house...).  However, no one EVER told me that if you were to quit your job and stay home that you would find yourself becoming the *type-A neat freak* you swore you would never become. Yes, I am becoming my mom - I am finding that I like things clean, neat and over organized.

Since having my precious little bundle of joy I found that I was really having a hard time adjusting to this whole stay at home mommy thing... and after FINALLY speaking up and talking about it I found that there's a good reason for the way I am feeling.  I am a NEW mom and I need to figure out how to make my life feel more together.  No one tells you how much harder (although much more rewarding in my option) staying at home with your child is.  With that said if you were to visit me at my office at my old job last year you wouldn't recognize where you were... I was that type-a neat freak at my office that I am now becoming at my home.  Everything was organized and then organized again.  I would clean my desk off with those Clorox wet wipes at least once a week and everything had it's place.  I am now having to remind myself that my home is now my office and that I need to get it organized and neat and clean.  Well, what better way to get that ball rolling is there than to MOVE into a brand new home???

Yes, yes.  You have read that correctly... the LeBlanc's are moving again but this time into our OWN home that has a TON of light, storage and extra space!  Eloise will have her very own room with two closets. We will have a guest room for all of our family and friends to stay in.  Daniel will eventually have his own man cave in the basement!!  Plus we will have almost 1500sqft of just STORAGE! So I can FINALLY have a place to keep all the extra stuff we cannot fit into our new 2000sqft house.  I am getting to basically create my almost dream kitchen and will have an amazingly beautiful screened in porch to sit in all year round!  What makes this all even more exciting is that I FINALLY feel like I can get organized.  Is it going to take some time? Yes.  Will I have to spend a little extra $$ in order for it to get the way I want it? Yes. But it's all worth it! Especially since I have a baby to enjoy it with me!

I am so looking forward to moving day and getting to start completely from scratch!! Thanks to pinterest I am getting a TON of ideas of what to do!!  I will have to share before and after photos with you all soon!!

Welcome 2012!!!

"Should auld acquaintance be forgot,
And never brought to mind?
Should auld acquaintance be forgot
And auld lang syne?"

Welcome 2012!  It's so very nice to meet you!!! It's really amazing to me how fast time goes by... I am SO excited to see what 2012 has to bring for me and my little family!  I've finally started to figure out how to be a good mom and actually get things done!  One of the things that I have found is that I actually feel the need to have a tangible calendar.  Which is odd considering for the last 4 years I have heavily relied on my outlook calendar to schedule my life.  Now that I am a stay at home mom I find myself really wanting to have a calendar that I can walk around with.  With that said I was going through pinterest and I found my perfect planner!  It's by Erin Condren and it's ADORABLE!!!  When I read the quote by Henry Thoreau I felt like it was speaking to me (cheesy I know, but still!)!  Here's what it looks like!
I also have a LONG wish list of things I would like to get from there so if anyone is reading this (i.e. parents, husband, siblings etc) GIFT CARDS to Erin Condren would be GREATLY appreciated for my birthday or Christmas 2012!!!  Here are some of the things I am looking forward to getting (first is the address book but I want to change the color, second are return address labels and lastly is the iphone4 case in "favorite things" and I am currently working on my favorite things list!)!

Well, on that note I must be going!  Little Eloise is calling my name - well more like "Ah-goo" which means I am awake and will be wanting some food soon!  Until next time...
